Platinum

I recently signed up for a writing class that promised '10 weeks of creative growth'.  Instead we sat around listening to and critiquing each other's works in progress while the instructor looked on, sipping tea; occasionally offering a thought or two.

The course outline also described 'short lectures at the start of class' that never happened.  Into the third week I'd had enough and asked for my money back.


I was refused.

When I didn't show up for the fourth class, one of the members of the group e-mailed me and I learned that I wasn't the only one to complain.  Another member had asked for a refund; he'd been refused as well.  Then I got an e-mail from the instructor or policies and procedures; he'd covered his ass - big surprise.

A good thing that came out of all this nasty business is I have a new writing friend and we're meeting for coffee later today.  Every cloud has a silver lining.

I'd say this one is platinum ...

Like Chips

As promised here is the best and most flavourful way (in my opinion) to cook green beans/broccoli:

Bring a large pot of water to a rapid boil; veggies need elbow room in order to cook properly.


In the meantime mince 3 cloves of garlic and set aside.  In a large bowl mix ¼ teaspoon sea salt, a ¼ teaspoon freshly ground black pepper and 3 tablespoons extra virgin olive oil. Add the garlic and whisk to combine.

Brussel Sprouts

When I was a kid I hated brussel sprouts; I called them baby cabbages.  Today I know my hatred had nothing to do with the vegetable but the method of cooking forced on it; they'd been boiled beyond reason, sometimes recognition.

Being vegan for the last four years, I've done a lot of experimenting with vegetables to find the best, most flavourful way of serving them up.  And I believe I've found it.

I now roast everything.

And the recipe is always the same - wash, dry, chop, sprinkle with sea-salt, ground black pepper, and a little olive oil.  Toss. Roast. Eat!  Cooking times depend on the veggie.

This works for carrots, squash (delicata and buttercup are my favourite), potatoes, cauliflower, asparagus, beets, pearl onions and garlic.

Tomorrow I'll share the best cooking method I know of  for green beans and broccoli.

My Daily Round

I'm off to wal-mart for some groceries ... extra virgin olive oil, balsamic vinager, brussel sprouts, green beans.  I'll stop at the LCBO for a bottle of shiraz while I'm out, and I will most likely stop by Tim's for a coffee.  I always do. I'll take Ben for a walk afterwards; it's a beautiful, sunny day here in Oakville.  February is not a month that allows for much walking in Ontario, but we've been lucky this year; it hasn't been too cold so far.


I'll spend the afternoon reading; Ben will be snoring on my lap, or maybe I'll go to the library.  Later I'll start supper ... those brussel sprouts, roasted on a bed of quinoa, some salad, and fruit for dessert. A glass of wine.  The evening news.  More reading.

That's the plan anyway.
I like it.  I think it's a good one.

My Trip to Cuba

A dear reader asked me about my trip to Cuba so here you go, Rita C.

We stayed at an all inclusive resort in Cayo Santa Maria on the northern coast, basically in the centre of the Island.



The resort was beautiful, the beach was breathtaking (I'd always assumed those pictures of turquoise waters were photo shopped; not so!  The pool was also lovely complete with a swim up bar and lively entertainment.  There was even a poolside Yoga class one day.

The food wasn't very good, but the service was. I read somewhere that you don't go to Cuba for the food - that is VERY TRUE.

We had picture perfect weather the entire week.  We snorkeled, we swam with dolphins, we had a wonderful time!


If you are considering a trip to Cuba, I say do it.  You'll love it.
